DESCRIPTION
The red spinach or lal shaak as it is known in West Bengal,this lesser-known cousin of Popeye's favourite food is filled with all things healthy.
200 g Red spinach leaves
2 tablespoons Mustard oil
3-4 cloves Garlic
2 Green chillies slit
½ tsp salt
1/4 tsp Turmeric
½ tsp sugar
1.Clean the red spinach leaves to remove any dust or sediments.Chop and set aside to drain.
2.In a work or kadghai, heat mustard oil.
3.Add lightly crushed garlic cloves to the hot oil and stir till golden brown.
4.Add the chopped red spinach leaves and mix well.
5.Add the green chillies, cover and cook for 3-4 mins.
6.Add jaggery or sugar, mix well. Cover and cook for another 4 mins or untill the water has almost dried.
7.Switch off and remove from flame.
8.Serve with steamed rice and a dash of kashundi.
